Chef Jean Delport and his team are committed to providing each and every guest with an exceptional dining experience. He says: “Every dish in each seasonal, multi-course tasting menu is designed to a hunter-gatherer concept of food that’s foraged, cultivated and raised on the estate or close by. It is enjoyed as an intimate dining experience; a small, exclusive dinner party within the estate’s Italianate mansion house”. Dishes such as the Not So Milk Tart, Rabbit Eats Carrot and Snail Fricassèe Parsley Garlic, are but a few of the seasonal courses to be savored.

Creatively displayed, our Rabbits Eats Carrot dish contains a variation of ingredients which are all from our beautiful Grade I gardens and perfectly plated with aromatic herbs for your enjoyment.

Snail Fricassèe parsley garlic

White wine from Benguela Cove and oak from Leonardslee is used by our head Chef, Jean Delport for when he prepares our Snail Fricassèe Parsley Garlic dish. The simple yet interesting dish is picture perfectly assembled through a mixture of coloures and textures, giving you an extraordinary experience with your food.

From the clear cut ingredients, distinct way a particular sauce requires to be prepared on a plate, to the surface area on which courses are assembled - everything is simply perfect. In addition to the quality of the ingredients used for each course, the ability to exceptionally grasp the culinary method of working, the coming together of different flavours, and the chef’s personal touch is demonstrated in each dish presented.
